The distillery was established in 1997 by Thierry Guillon and started distilling whisky in 1999. Rather than using the more traditional ex-Sherry and ex-Bourbon barrels for whisky maturation, Guillon Distillery age their whiskies in barrels previously used for white, red and fortified wine maturation. In particular, the distillery uses many barrels previously used to mature sweeter style French white wines, such as Banyuls, Loupiac and Sauternes. Guillon Distillery offer a range of single malt whiskies matured in various cask types and bottled at a range of strengths (Alcohol By Volume). Guillon Distillery is located in Louvois, in the Montagne de Reims area of the Champagne region.
