Michel Couvreur
Michel Couvreur was a Belgian guy producing Scotch Whisky in the heart of Burgundy (Bouze-Les-Beaune). He started doing so in the 1950's. He learned the distilling and production process in Scotland after having moved first to England. His dream was to produce the ultimate whisky. Because the industry was changing and the old methods were being replaced by cheaper new ones he went back to France in the 1970's where he dugged his own cellar in order to mature his Scotch in rare sherry casks (Pedro Ximenez and/or Palomino). In that way he created and produced his exceptional whisky.
